Our vegetable patch is starting to overflow with produce, I have been able to harvest bucket fulls of potatoes and hand fulls of chillies, tomatoes, squash, pumpkin, beetroot, beans etc.
Whilst this part of the garden is thriving the fruit trees are starting to slow down. My peach, plums and apple trees haven’t had as much produce due to the heavy prune I gave them this past winter, but I am looking forward to the crop levels for next year.
Every year I tend to plant too many squash vegetables and I am left with bucket fulls, which I am constantly left unsure of what to do with.
So this year we created a squash soup and have been changing our diets to fit all these guys, even the chickens were lucky enough to get a taste.
Squash is definitely one of the best vegetables to grow in Victoria, you get great produce rates and good flavour. But due to their high produce rates and speed of growth, I find myself with oversized squash in a very short period of time. Yes their size can be impressive but their flavour once they grow to such a size is bland.
So make sure to harvest them when they are small!
